Electronic nose as a tool for determination of authenticity of traditional cheeses. This technology uses analysis of volatile compounds together with chemometrics for the cheeses discrimination and classification process. These combined methods can be used in research on origin and authenticity of cheeses and to confirm the integrity of producers and products, bolstering certification and ensuring product conformity to European Community requirements. Marketplace Business Case Study Coolanowle Organic Meats
Jimmy Mulhall, Owner Coolanowle Organic Farm (organic meats), Ireland identified an opportunity in the Irish market for a range of organic cured, smoked and fermented meats (which would add value to his existing organic meat business). Jimmy posted this business need (specialist training andknowledge on a variety of meat processing and charceuterie production topics) on the Marketplace.
The first response from the Marketplace was an opportunity to attend a Meat Technology and Business networking event in La Rioja Spain providing access to state of the art knowledge, innovations and contacts in meat processing from across the Europe .Whilst there Jimmy sourced further food industry training from CTIC –CTIA and returned Summer 2015 to attend upskilling in: Meat Science and Technology, Meat Product Quality and Classification, Technologies for Raw-Cured Meat Products, Facilities and Equipment required and Recipes and Ingredients. The training included a practical demonstration of chorizo and salchichon production. A third soultion sourced was the Irish Meat Mission in Gubbeen Farm, Co Cork, Ireland (March 2016), where he further developed his charcuetuire production knowledge and local contact base.
Through interaction with the TRADEIT Marketplace, Coolanowle Organic Farm has sourced the knowledge, skills and contacts to develop an Irish Organic Charceuterie offering. The business is in a phase of considerable business development and expansion. The production of smoked, cured and fermented meat products will become part of the key product offering in the near future.
This Month's Most Vewed Profile Labquip - milk pasteurization test strips Phosphatesmo MI
Labquip supply the Phosphatesmo MI test strips for the specific detection of alkaline phosphatase in milk. In the dairy industry the test is used for the quick and easy quality control of pasteurized milk. The strip is dipped into the milk and incubated at 36'C. if the paper remains white the pasteurization is complete.
